Healthful Recipe of the Month

Chocolate Banana Pancakes:

1/4 cup egg whites
1 scoop chocolate protein powder
Nonstick cooking spray
1/4 cup banana slices (mashed)
1 Tbsp sugar-free maple syrup                    1 Tbsp chopped walnuts (optional)


This recipe makes approximately 2 pancakes. For an additional pancake, add 1/2 scoop of protein powder.

1. Mix protein powder, egg whites, mashed banana slices, and chopped walnuts in a mixing bowl. (You may also add water if the mix is still a little thick).

2. Spray a pan with cooking spray and place over medium heat.

3. Pour mix into pan. Cook on both sides until brown, about 2 minutes per side (may vary).

4. Top with blueberries, cinnamon, walnuts (if not used in batter), and syrup (or almond butter).
